APPETIZER WITH SPRING ONIONS

What you need:

(for 12 portions)

  • 2 bunches spring onions
  • 1 red bell pepper
  • 6 eggs
  • 6 tablespoons semolina
  • 200 g sour cream
  • 1 teaspoon of baking powder
  • 300 g flour
  • 100 g feta cheese, grated
  • 2 tablespoons sweet corn
  • 6 dried tomatoes
  • 100 g black olives finely chopped
  • Sweet paprika powder
  • Salt, pepper to taste
  • 3 tablespoons of oil
  • baking paper

How you do it:

1. Cut the spring onions in pieces of 1 cm. You can replace the spring green onions with 1 finely chopped onion. Dice the red bell pepper into small cubes.

Heat 2 tablespoons of oil in a pan, add the chopped onion and pepper and fry them for 2-3 minutes, until the onion softens. Let them cool down.

2. Mix the eggs with semolina, sour cream and baking powder. Gradually add the flour, mixing until you get a soft dough that can be poured easily.

3. Add the fried onion and bell pepper, half of the grated feta cheese, sweet corn, sliced dry tomatoes, chopped olives, paprika powder, salt and pepper to taste.

4. Prepare the baking tray, rectangular 8×10″ (20×30 cm) or round 10″ (26 cm) in diameter. Grease it with a little oil and line it with baking paper.

Pour the mixture and sprinkle the rest of the grated cheese on top.

Preheat the oven and bake at medium heat 350 F (175 C) for 40-45 minutes.

Cut into portions after it has cooled. This appetizer can be served warm or cold and it is excellent with a glass of white wine or beer.
